Yellow isn’t just yellow
Here is a color scale used to measure the yellow color of margarine. In 1888, it became illegal to color margarine more yellow than number 9 on the scale. It was important to ensure that butter and margarine couldn’t be confused, so the Danish government wanted to control the coloring of margarine.
